Dinner Party Tiramisu Cups

I don’t know why, but I am slightly obsessed with making ‘minis’. I have mini ramekins, mini tart shells, mini dim sum baskets, mini dessert cups, mini everything! I think I’m obsessed with how ‘cute’ these ‘minis’ look. So for a friend’s dinner party which she kindly suggested she would prepare, I offered to bring dessert to the affair. I decided Mini Tiramisu Cups would be best since I could add as much booze as possible and everyone could have their own individual portions. lol

Using a recipe that I learned while taking a Northern Italian cooking class at George Brown College…

Stuff you need:

450g of Mascarpone Cheese (1 container)
6 eggs
6 tablespoons of sugar (5 spoons should be good enough, I found 6 to be too sweet!)
1 package of Savoiardi Lady Fingers (I find these ones work best, I found them at Loblaws)
4 oz Kahlua
2 cups espresso coffee
a few tablespoons of cocoa powder

Putting it all together:

In a bowl, prepare your espresso mixture (by mixing it with water, instructions should be on package) with the Kahlua. Set aside.

Then separate your egg whites and egg yolks. (I find it’s easiest to crack the egg, then hold the yolk above your fingers and let the whites seep through into a bowl.

Whip the egg whites (using an electric mixer) until stiff peaks form (takes maybe 5-8 minutes) in one bowl.

In a separate bowl, mix the egg yolks with the sugar until a pale yellow colour forms (maybe 5 minutes). Then mix in the mascarpone cheese. Using a wooden spoon or spatula, fold in the egg whites into the egg yolk + cheese mixture.

Spoon some of the cheese mixture into each dessert cup to fill the bottom. You will be layering the cheese mixture with the lady fingers.

Take your lady finger biscuits and soak them front and back into your espresso and liquor liquid. To check if they have soaked through, break apart the biscuit (breaking it is OK here because I am making mini ones, so no one can tell I broke them to check it’s soaked-through-ness :P ). Put them on top of the cheese mixture in each cup, creating one layer of lady fingers. Spoon in another layer of cheese to fill to the top.

Dust with cocoa powder on top to finish it off. It is best to refrigerate overnight so that everything can set.

Portions 12-16 depending on the size of your cups.
